This vibrant metropolis has a spirit that's halfway between that of the modern cities of Brazil's South and of the traditional northeastern centers. It offers both insight on the past and a window to the future.It was in Pernambuco State, formerly a captaincy, that the most violent battles between the Dutch and the Portuguese took place. Under the Portuguese, the capital city was the nearby community of Olinda. But beginning in 1637 and during the Dutch turn at the reins (under the powerful count Maurício de Nassau), both Olinda and Recife were greatly developed.The city has beautiful buildings alongside the rivers that remind many visitors of Europe. Unfortunately, huge swathes of 19th-century buildings were razed to make way for modern structures. As a result, the center of the city has pockets of neocolonial splendor surrounded by gap-toothed modern giants. Today Recife is a leader in health care and has benefited from significant government investment in recent years, resulting in a boom in infrastructure and construction industries. It's also Brazil's third-largest gastronomic center—it's almost impossible to get a bad meal here.Recife is built around three rivers and connected by 49 bridges. Its name comes from the recifes (reefs) that line the coast. Because of this unique location, water and light often lend the city interesting textures. In the morning, when the tide recedes from Boa Viagem Beach, the rocks of the reefs slowly reappear. Pools of water are formed, fish flap around beachgoers, and the rock formations dry into odd colors. And if the light is just right on the Rio Capibaribe, the ancient buildings of Recife Antigo (Old Recife) are reflected off the river's surface in a watercolor display. | |||||||

Whether your favorite coffee creation is a macchiato or a cool and refreshing illy crema, the chic and bold ambiance of Baristas is perfect for relaxing in quietude or socializing with newfound friends.
Exquisitely decorated with heirloom antiques, pickled wood furnishings and art from Jacques Pépin’s personal collection, Jacques was modeled after a Parisian bistro. Comfortable and eclectic, the ambiance is pure French, as is the cosmopolitan yet wonderfully embraceable cuisine.
Luscious aromas waft from the gleaming show rotisserie, where chicken, duck, pork, beef and veal roasts slowly turn. Each dish is a classic, ingeniously reinterpreted by Master Chef Pépin. Rotisserie roasted chicken falls off the bone, bursting with flavor, while his sea bass filet pairs exquisitely with beurre blanc.
Polo Grill embodies all the elements of a classic steakhouse, expressing them with timeless reverence. Mindful of tradition, the decor features crisp, white linen tablecloths, dark wood furnishings and supple, high-back, burgundy leather chairs. Each course stands as the very definition of time-honored favorites, most notably the beef dishes, all of which are USDA Prime and dry-aged for 28 days to enhance tenderness and flavor. Succulent seafood dishes such as Grilled Swordfish and Whole Maine Lobster Gratinée are also classics in their own right. The Classic Caesar Salad, too, is prepared according to tradition, tableside and with gusto.

The Grand Dining Room is a study in stateliness, a tribute to the spirit of Europe’s marquee 5-star hotel restaurants that inspired its dignified yet convivial ambiance. Handsomely decorated in rich woods, designer tapestry fabrics and oversized armchairs, the expansive dining area exudes classic splendor. Tables are beautifully set with bone china, sparkling Riedel crystal, gleaming silver, and fine cotton linens. Remarkably, as sumptuous as The Grand Dining Room’s decor is, guests always feel completely at ease within its grandeur. Much of that is a direct reflection of the formally attired and classically trained wait staff, graciously serving course after course of European-inspired cuisine or delectable alternatives such as light and healthy Aquamar Vitality Cuisine and plant-based options. And on board Regatta, Insignia, Nautica and Sirena signature specials from Jacques and Red Ginger are featured nightly in The Grand Dining Room.
